We get asked by clients all the time how to make quick and healthy meals for their family. It’s so important to have staples at the ready so you can whip up a meal for your family in minutes. These meatballs are perfect because you can make triple batches to freeze and sneak in tons of veggies that your kids won’t even notice. They’re so versatile and work with any ground grass-fed organic meat on hand.

Directions:

Finely dice onions, garlic and any veggies on hand and sauté in ghee or avocado oil with Himalayan salt and other seasonings you enjoy. Saute until veggies are cooked.

While the vegetables are cooking in a bowl combine 1 egg for every pound of beef, salt, pepper, garlic pepper, splash or 2 of hot sauce if you like heat. Add any herbs of your choice too. Parsley finely chopped tastes great!

Fold veggies into the mixture.

Roll into golf size balls and bake at 375 for about 25 minutes, until they’re cooked through.

Toss them in your favorite sauce, put them on a stick to make meatball lollipops or freeze them for later!
