As promised more Spring Detoxing Meals in under 30 minutes + 1 pot!

Anti-inflammatory from the turmeric, black pepper, ginger, and asparagus + cleansing with beautiful prebiotics and antioxidants from the asparagus + loaded with protein + SIMPLE.

Gratitude @trumanhaines for the inspiration. I adapted the @nytimes recipe to amp up the anti-inflammatory qualities = increased the turmeric/black pepper + added minced ginger and added MORE asparagus + made the recipe GF and lower in sugar.

One Pan Turmeric + Ginger Anti-inflammatory Chicken + Asparagus Skillet
Yield: 4 servings

1 tablespoon organic honey
1 tbsp ground turmeric
1 tsp minced fresh ginger
¼ cup of water
1.5 tsp black pepper, plus more to taste
Kosher salt to taste
2 tablespoons GF Flour blend, we used “Namaste GF Flour, or try Bob’s”
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon coconut oil
6 cups asparagus, trimmed and thinly sliced on an angle
1 teaspoon unseasoned rice vinegar or coconut aminos
1 lime, cut into wedges (optional)

Step 1
In a small bowl or measuring cup, stir together the water with the honey, pepper, and ½ teaspoon salt; set honey mixture aside.
Step 2
In a medium bowl, stir together the flour, turmeric, ginger, and 1 teaspoon salt. Add the chicken and toss until coated. Let marinade for at least 1 hour.
Step 3
In a nonstick skillet, heat the oil over medium-high. Add the chicken and cook until the turmeric is fragrant and the chicken is golden brown on both sides, 2 to 3 minutes per side. Add the asparagus, season with salt, stir to combine and cook until crisp-tender, 2 minutes.
Step 4
Add the honey mixture and cook, stirring, until the chicken is cooked through and the sauce has thickened, 2 to 3 minutes. I also added another dash of turmeric to this step!
Step 5
Remove from heat and stir in the vinegar. Season to taste with salt and pepper. Serve with lime squeezed over top, if you like.

Serve with brown rice or in lettuce boats. Delish! ENJOY.
