Come in from the cold with this vegan gluten-free, nutrient and protein packed stew. So very simple to make too! Whole, clean, organic eating for you and your family can be made easy with this meal. We purposely made the portions for 8 so you can have leftovers! It’s that healthy and nourishing. Ingredients

(Serves 8)

*Use organic if possible

*8 cups vegetable stalk

*1.5 cups of red onions (diced)

*1 cup of scallions (diced)

*5 garlic cloves (diced)

*1 inch of fresh ginger thinly sliced

*1.5 tbsp of coconut oil

*2 cup of cannellini beans (make your own or use organic pre-made)

*1 cup of radishes (chopped)

*1 cup of carrots (chopped)

*1 cup of celery (chopped)

*1 cup of zucchini (chopped)

*1 cup of baked sweet potato (cubed)

*2 cups of chopped spinach

*2 tsp of Himalyian sea salt

*2 tbsp of EVOO

*1.5 cups of chopped parsley (for stew + garnish)

*EVOO, Himalayan Sea Salt, Cracked Pepper and Parsley to garnish

Instructions:

Bake sweet potato in foil with holes on 375 degrees for ~1 hour or less. Let it completely cool before you cube it. You can even make this the night before to make your prep easier!

Saute the diced onions, scallions, garlic and ginger in coconut oil until translucent and slightly brown.

Chop all the above veggies.

Add all the above ingredients (including all those that you sauteed) to a large soup pot except for the chopped spinach. Save half of the fresh parsley for garnish. Let the pot cook on low heat for 1.5-2 hours. We find that all the flavors assimilate together the best when cooked on low 1.5-2 hours. If you want to keep your stew on simmer for longer, go for it. The flavors need time to come together.
