Spiralizers are the new “it” gift for 2015! This spiralized zucchini “pasta” is a healthy, simple, quick and beautiful looking dish. Zucchini boasts a rich nutritional profile, thanks to its phytonutrients, minerals and vitamin C content and it makes a perfect substitute for grain pastas.
To make the zucchini “pasta” a satisfying meal instead of a super side dish, we amp it up with whole-grains and any protein of your choice. We love organic beans and toasted, turmeric-covered nuts or seeds for added detoxing and anti-inflammatory benefits. We use a variety of dressings on our “pasta” creations so we never get bored. Some of our favorites include: tahini; extra virgin olive oil, salt, pepper and lemon; ume plum vinegar; tomato sauce; or hummus. Whatever you have in the kitchen—explore!

(1 large serving or 2 smaller servings)Ingredients1 organic zucchini
½ cup black or brown rice or quinoa
½ cup organic chick-peas, black beans or other bean
2 tbsp extra virgin olive oil
1 tsp ume plum vinegar
¼ cup organic cherry tomatoes (optional)
Himalayan sea salt and pepper to taste
Squeeze of lemonTurmeric Toasted Seeds or Nuts:
2 tbsp sunflower or pumpkin seeds or pistachios
1 tsp extra virgin olive oil
1 tsp turmeric
Himalayan sea salt to taste
Preparation:
Take 1 organic zucchini and use a spiralizer to make into spaghetti-like noodles. Toss in the cooked rice or quinoa, beans and tomatoes (reserve a few tomatoes for garnish). In a small bowl, combine the extra virgin olive oil, vinegar, salt and pepper. Pour over the other ingredients and toss. Toast your nuts or seeds in a pan over medium heat with 1 tsp of olive oil and the turmeric powder until fragrant and golden. Shake pan every few seconds to avoid burning. Add a dash of sea salt. Garnish with remaining tomatoes, turmeric toasted nuts or seeds and a splash of lemon.
