Salsa Verde, Veggie, Cilantro, and White Fish Taco Night. Healthy, clean, and delish!

I design recipes based on what I want to eat and what my clients are most requesting—under 30-minute protein and veggie-packed EASY meals for the family that can be leftovers too! Notice how I like to amp up the functional nutrients–I found inspiration from 2 recipes and put them together with more cruciferous veggies + cleaner ingredients. Love cooking with salsa.

As we age, we need more protein. The body breaks it down into amino acids, which it uses to build muscle. After the age of 30, you begin to lose as much as 3% to 5% of muscle per decade. Especially in perimenopause thru menopause. Think ~30-40g/meal or ~4-5oz/meal of protein (this varies depending on YOUR goals/weight, etc.).

Enjoy this protein + detoxing CLEAN and SIMPLE tacos that my whole family loved:

Protein: any white fish of your choice works great (I used Cod)
Vitamin C: peppers
Prebiotics + Anti-inflammatory: onions + garlic + salsa verde ingredients
Anti-inflammatory/detoxing: cilantro + chopped cabbage (cruciferous veggies produce glutathione, your master antioxidant over the liver)

Serve over cauliflower rice or a bed of @OrganicGirl protein salad mix (at Wholefoods) for extra protein or have in @Siete  grain + gluten-free taco. Delish!

Ingredients
*4 servings (~2-3 pp)–make more for leftovers!

1 lb fish fillets, rinsed and pat dried, and cubed (I used wild cod, but flounder, tilapia, etc. works great)

“Chili Lime” @ Trader Joes Seasoning or any taco-inspired seasoning to rub the fish prior to cooking

1 tbsp ghee or avocado oil

1 onion, chopped

4 garlic cloves, finely minced

1 cup of cubed or sliced peppers (any color works!)

1/2 cup frozen yellow organic corn or “fire-roasted” organic frozen corn (optional)

1/2 to 3/4 jar of organic salsa verde (use your intuition of how much YOU like!, I used 3/4 jar )

2 cups of sliced cabbage, I used @urbanroots brand pre-chopped at Wholefoods or their brand has a great organic pre-chopped version

1.5 cups fresh cilantro, chopped

Fresh lime Juice + Salt and pepper to taste

Serve with @Siete Taco Shells or on a bed of greens or cauliflower rice
Optional: slice in avocado
lime wedges and cilantro for garnish

INSTRUCTIONS

Rub the cubed white fish with salt, pepper and “Chili Lime” Trader Joe’s seasoning or any taco-like seasoning of your choice.

Heat ghee or avocado oil in a large skillet over medium heat in a cast iron pan or large pan. Sauté onions for a few minutes then add garlic and peppers. Place the cubed fish in the skillet and cook until lightly seared on medium-high heat a few minutes (mix well). Then add in the salsa and corn and let all simmer on low/medium for 10 minutes. Can use as much or as little salsa as you like.

Before serving, mix in the cabbage and cilantro. Serve with @Siete taco shells, cubed avocado, lime squirt, and extra cilantro for garnish. Hot sauce is fabulous too!
