Happy Spring! For some of us, this time of year means searching for easter eggs… for others it means searching for the afikomen… And if you fall into the latter category, you know that chocolate is much more fun to eat than matzah, especially by the end of the eight day holiday. Regardless of what holidays you celebrate, matzah is a very versatile cracker that can be used by all throughout the year. The ingredients are simple: flour and water, and whole wheat varieties can be found everywhere. Below are three ways to use your box for breakfast, lunch, dinner or a snack that certainly beat smothering it in cream cheese and jam yet one more time!

Apple Banana Matzah Breakfast Bake (aka Sweet Matzah Kugel)

Ingredients:
(serves 6-8)
4 tbsp olive oil or melted coconut oil
2 cups matzah farfel (whole wheat), or crumbled sheets of matzah
3 eggs, beaten
1/2 cup honey
1 tsp cinnamon
1 banana, sliced
2 apples, peeled and grated
1/4 cup chopped walnuts (optional)
1/4 cup raisins (optional)
scant salt

Preheat your oven to 350 degrees. Soak the farfel in water in a large bowl and drain immediately. Add in the beaten eggs to coat the matzah farfel. Add the remaining ingredients to the bowl and stir to combine. Spread evenly into an 8×8 pyrex dish, patting the mixture into the pan. Bake in 350 degree oven for 50-60 minutes until golden brown.

Avocado Matzah Toast

Ingredients:
(serves one)
1/2 sheet of whole wheat matzah
2 eggs
1/2 avocado
EVOO
salt, pepper, paprika or cayenne
squeeze lemon (optional)

Thinly coat the bottom of a pan in olive oil. Crack two eggs into a skillet and turn to medium heat. Meanwhile, score half of an avocado and squeeze it out onto the matzah cracker. mash the avocado into the cracker until it is spread evenly over the matzah. Sprinkle with salt, pepper, paprika or cayenne and squeeze fresh lemon on top. Flip your eggs over to cook to over medium. Top the avocado toast with the two cooked eggs and sprinkle with salt and paprika or cayenne to taste. ENJOY!

Vegetarian (not Vegan) Matzah Lasagna

Ingredients:
whole wheat matzah
pizza sauce
2 cups cottage cheese or ricotta
1 cup shredded mozzarella or other cheese of choice
spinach
sliced mushrooms
EVOO
salt
garlic powder
Parmesan Cheese (or try our vegan parm if you are not keeping Kosher for Passover!)

Preheat the oven to 350 degrees. Saute the sliced mushrooms in olive oil until softened and allow to cool. Mix the cottage cheese or ricotta and shredded cheese together. Spread a thin layer of pizza sauce on the bottom of your pan. Next lay down the matzah to create one layer across the pan. Top with 1/2 of the cheese mixture. Spread pizza sauce over the cheese mixture. Add a layer of spinach and 1/2 of the mushrooms. Repeat with matzah, sauce, cheese and veggies. Sprinkle grated Parmesan cheese and shredded mozzarella over the top as the final layer. Bake in the 350 degree oven until the cheese is melted and slightly brown and bubbly on top. MMmmmm
