Who wants to lighten up? @Bonberi inspired this beauty. I’ve been making a variation of this for years and love this version and so will your gut. Make it a few times a week to kick-start your digestion. We love to pair it with a lean protein or listen to your body and just have it as is.
Eating this salad raw has beautiful enzymes but if your gut does better with warming veggies, saute it! Listen.
In fighting Lyme, we are loading my little guy up on gut healers/cruciferous veggies. This salad is in the weekly rotation (luckily he likes it + so does the whole family).
Functional Gut Love:
*Fennel: combats bloat, is fiber-rich, contains vitamin C, etc. (try chewing fennel seeds post a meal to aid digestion!)
*Arugula, radishes, cabbage: We adore the cruciferous veggie family and these are in all our client programs. They contain glucosinolates, which are sulfur-containing chemicals and produce glutathione, your master antioxidant aiding in liver detoxification. Powerful detoxing, antioxidant-rich, fiber-rich, and anti-inflammatory properties.
*Prebiotic Rich: these beauties feed the GOOD bacteria in your microbiome–thank you scallions + all the above
*EVOO: Healthy Fats
*Parsley + Lemon: More detoxing + anti-inflammatory beauties
Recipe (adapted @Bonberi)
2 cups thinly sliced green cabbage
3 cups of arugula
2 scallions, thinly sliced
2 stalks of celery, thinly sliced
1 fennel bulb, thinly sliced
3/4 cup radishes, thinly sliced
1 handful of parsley, chopped
4 tbsp EVOO
Juice of 1 Lemon
Salt + Pepper (to your liking)
Toss all together in a large bowl (minus the arugula). Massage away with your hands! Toss in arugula after all is massaged. ENJOY.
