The cold weather has us craving warm foods. When we are homebound because of snowstorms and snowicaines it is the perfect excuse for recipe creation! This vegan, protein and fiber packed soup is super simple to make and extremely satisfying. The creamy texture, robust flavors and powerful health benefits make this a recipe you will make again and again. It keeps well in the refrigerator or freezer and can even be used as a bean dip once cooled!
Why split peas? Peas are packed with fiber, especially soluble fiber. Soluble fiber lowers cholesterol by forming a gel-like substance in the digestive tract that binds to cholesterol and pulls it out of your body. It also helps to manage blood sugar levels as well as slow digestion, keeping you fuller longer. Peas are also high in protein, which also boost satiety. Low in fat and high in three different B vitamins, peas are a powerful addition to any diet. There are more reasons to enjoy this soup. Split peas are a good source of potassium, which has been linked to a lowering of blood pressure and decreased development of plaque in the blood vessels. A clean heart is a happy heart! Potassium also helps support your metabolism.
This recipe also calls for turmeric and curry powder, both packed with antioxidants and antiinflammatory agents. We can’t rave enough about turmeric. A pantry staple in our homes, turmeric helps fight inflammation and boost immunity. Curcumin, the agent in turmeric responsible for its vibrant yellow/orange coloring, is the source of all these benefits. Noted to be as potent as Motrin or hydrocortisone, turmeric lacks all of the negative side effects of these OTC drugs. Turmeric may even be powerful enough to relieve symptoms of irritable bowel disease, rheumatoid arthritis and cystic fibrosis. Studies have shown a link between turmeric consumption and cancer prevention and growth inhibition. And it adds an earthy, warm flavor to your recipes!

Curried Split Pea Soup
Ingredients:
3 c green split peas, rinsed
2 tbsp olive or avocado oil
1 yellow onion, diced
3-4 cloves garlic, diced
1 tbsp curry powder
1 tsp turmeric
1 tsp garlic powder
½ tsp red pepper flakes (more if you like more kick)
8 c broth or water
sea salt and fresh ground pepper to taste
optional: ~3-4 inches kombu
optional: sauteed kale, sprouted pumpkin or sunflower seeds
Directions:
- Heat oil in a large pot.
- Saute onions until translucent, about 3 mins
- Add in garlic and saute 1 min
- Add in spices, stir to coat, 30s
- Add in peas, stir to combine
- Cover in broth or water. (optional add in kombu) Bring to a boil then simmer for 40-50 mins until the peas are soft.
- Puree with an immersion blender or in your blender
- Serve with kale + seeds as a garnish, if desired
