Red cabbage is rich in vitamins C, K, & B’s and minerals such as iodine, calcium, magnesium, potassium, and iron and is beneficial for the digestive track. It contains antioxidants with powerful anti-inflammatory, anti-viral, and anti-cancer properties.

We added sesame seeds to boost the nutrients–they are high in minerals such as calcium, iron, zinc, magnesium, and selenium and vitamins E, folate and B’s. Sesame seeds nourish the nervous system, strengthen hormone production and benefit the digestive system.

We adore the dressing and use it instead of hummus with crudites and beyond! It’s also a family favorite and I love that my kids get added protein and fiber in their salad. We have a few other nut-butter dressings on our blog, check them out.

Ingredients

1 head of red cabbage (or green)

2 tbsp sesame seeds

2 tbsp hemp seeds (optional)

1/2 cup of chopped scallions

Salt and Pepper to your liking (if you have “Everything But The Bagel” seasoning from Trader Joe’s, use it to your liking!)

Dressing:

1/2 cup of nut butter (we use sunbutter)

1/4 to 1/2 cup of water (depending on the consistency you like your dressing)

1/4 cup of coconut aminos, braggs or tamari

1/4 cup of rice vinegar or apple cider vinegar (goes best with rice vinegar)

1 clove of garlic

1 inch of fresh ginger (peeled)

Directions:

Chop entire head of cabbage and add the other ingredients (except sesame seeds). Blend dressing in a blender until smooth. Drizzle desired amount on salad. Add sesame seeds and mix well.

For extra protein, add in some hemp seeds.
