Flourless, no refined sugar, vegan, gluten free and packed with protein and antioxidants. The easiest dessert you can make and perfect for summer entertaining! No one will miss the refined junk and kid approved.
The maple syrup was from our neighbors at the Dirt Road Farm! It feels good to make a healthy dessert with local ingredients.
Ingredients:
Serves: 8-10
*Use organic ingredients, when possible
6 cups of any stone fruit or berries (cut, we used a varied of berries + stone fruits together)
6 tbsp of quality maple syrup (divided)
2 tbsp of freshly squeezed lemon
2 tbsp of EVOO
1.5 cups of almond flour/meal (or grind raw, sprouted and organic blanched almonds in a Vitamix for a few minutes to make your own flour)
2 tsp of hemp seeds
2 tsp of chia seeds
2 tsp of ground flax seeds
2 tbsp of cacao
1 tbsp of cinnamon
Pinch of Himalyian sea salt
Preheat oven to 400. Toss the chopped fruit and berries in a baking dish with 3 tbsp of maple syrup and the lemon juice. Mix the remaining ingredients in a separate bowl for the crumble. Add the remaining 3 tbsp of maple syrup. Mix all until combined. Add mixture over fruit and bake for ~20 minutes until the topping is brown and fruit bubbles. Heat before serving.
Top it with a delicious vegan vanilla ice cream or coconut yogurt.
