Apple picking is a fall tradition in my family. I’ve gone apple picking every year since my earliest childhood memories, and the tradition has continued with my three kids. We love the adventure of finding new varieties, running down the rows, and enjoying freshly picked-right from the vine – apples while we stroll.
After picking, the fun continues in the kitchen! Apple sauce, apple crumbles and pies are the usual, but this year we experimented with this delicious bread.
Ingredients
* 1.5c cassava flour
* 1/2 c sprouted spelt flour
* 1/3 c tapioca starch
* 1/4 c coconut or maple sugar + 2 tbsp for topping
* 1 tbs cinnamon
* 1 tsp pumpkin pie spice
* 1 tsp baking powder
* 1 tsp baking soda
* 1 tsp sea salt
* 1/3 c melted butter, ghee or coconut oil
* 2 eggs
* 1/2 c maple syrup
* 1 tbsp vanilla
* 4 medium apples, peeled and chopped into small cubes
* optional (1/2 c chopped nuts, seeds or chocolate chips)
Directions
1- preheat oven to 350. line a loaf pan with parchment paper.
2- Whisk the dry ingredients together in a large bowl
3- whisk the wet ingredients together in another bowl
4- Add the wet ingredients to the dry ingredients and stir until combined. Fold in the apples.
5- Pour batter into loaf pan. Top with a sprinkle of reserved sugar
6- Bake for 50-60 minutes until golden and cooked through
7- Remove from the pan. Allow to cool completely and then slice (toast) and ENJOY!
