To truly EMBODY Wellness, you need to indulge sometimes. We believe in enjoying, celebrating and relaxing This is possible, while also accomplishing goals and looking and feeling your best, when you make great choices for your body most of the time. Then, when a craving strikes, party rolls along or special dinner is on your calendar, you can loosen up and just enjoy.
We also believe in upgrading whenever possible! That’s why, when I kept wanting homemade rice crispy treats (childhood memory?!), I gave in and turned it into a fun activity with my kids. Instead of the usual Junky ingredients, I upgraded and used:
– organic marshmallows
– grass fed, organic butter
– organic puffed brown rice cereal
Trust me, they are still a treat and not a healthy snack, but I felt comfortable indulging and letting Liv and Cullen do the same!
This was my first time making marshmallow rice treats because I grew up kosher! I’m not sure I totally succeeded, but they were delicious! The kids measured and poured and launched the marshmallows into the pot (often unsuccessfully) from a few feet away in fear of the fire! We had as much fun making this new cookie as we did eating them! The kids also pressed them flat into the Pyrex and then chose shapes to cut the bars into. The hardest part was not eating them all before 8am (we wake up early!)
To make:
Melt 1/4 cup butter over low heat. Add in a bag of marshmallows, stirring consistently until the marshmallows are melted completely. Remove from heat. Mix in 5 cups of puffed rice. Press between two sheets of parchment paper in a Pyrex dish. Cut into shapes and enjoy! Store in an airtight container.
