When the ingredients are REAL, local and organic, everything just seems to taste better. The cucumbers and tomatoes are from our garden, so this salad was extra fresh and special to us.

The superfood green goddess dressing is one of our favorites. It’s oil free with a tahini base. We used spirulina, a blue-green algae, to add additional nutrients. Spirulina has a high percentage of protein and iron, as well as all eight essential amino acids, potassium, zinc, calcium, and vitamins B1, B2, B3, B6 and B-12. All of which strengthens immunity. Spirulina also contains gamma-linolenic acid (GLA), a “good fat” that is vital for the health and function of the brain, heart, and other organs. We also added cilantro and parsley to the dressing as both are wonderful for detoxification. Cilantro is specifically powerful for pulling heavy metals from your system.

Ingredients:

*use organic

1 cucumber

1 tomato

1 handful of any fresh herb (chopped), we love parsley, cilantro or basil

1/2 cup of white beans or any bean of your choice (can also use hemp seeds)

Himalayan Sea Salt

Dressing:

1/2 cucumber

Juice from 1 lemon

2 tbsp tahini

1 small garlic clove

1 tsp spirulina

2 tbsp of fresh parsley or cilantro or both!

1-4 tsp of water (depending on the consistency you enjoy)

Himalayan Sea Salt (to your liking)

Pepper (to your liking)

Directions:

Salad: Chop the tomato and cucumber and combine with beans and/or seeds and herbs.

Dressing: Blend all in a high speed blender. Add your desired amount of water depending on the thickness you enjoy. Start with 1 tsp and go from there. Pour your desired amount over the salad.
