No Bake Chocolate Chip Cookie Dough: Vegan and Gluten Free

When we were growing up, eating chocolate chip cookie dough was almost better than having the actual cookie! Sadly, these nostalgic memories do not help us accomplish our wellness goals. So, we came up with a healthier, guilt-free version of the decadent treat we love. Our chocolate chip cookie dough is delicious, raw, vegan, gluten-free and so simple to make.

Go ahead! Just mix all the ingredients together, freeze them for at least 10 minutes and then indulge in the joys of guiltless childhood!

Warning, these are addictive! Freeze three in a snack sized freezer bag for quick grab and go snacks or enjoy as a fun dessert with our vegan hot chocolate.

Ingredients:

*use organic when possible

1/2 cup almond flour
1 1/2 cup gluten-free rolled oats
2 tablespoons coconut oil
1 tbsp nut milk (we used almond milk)
2 tbsp almond butter (or any nut butter)
2 tbsp chia seeds
2 tbsp flax seeds
1/4 cup maple syrup
1 tsp vanilla extract
Dash of Himalayan sea salt
Chocolate Chips to your liking (we use “Enjoy Life” Vegan Dark Chocolate Chips)

Directions:

Blend oats in blender till a fine flour is made.

In a large bowl combine all the wet ingredients and ensure all are smooth and creamy (can use a hand mixer too). Then, add the almond and oat flour and salt. Mix in the chocolate chips last. If you need more liquid or the dough is too dry, add a small amount more of the nut milk.

Roll the dough into small balls and place on a plate-lined parchment paper.

Freeze for at least 10-15 minutes.
