It was January 1st and I resolved to use up some of the superfoods stored in my pantry. I walked in to face bags of chia, hemp, flax, seeds, cacao and more. A Holistic Health Coach’s playground! But how to use them all in a delicious, easy, family friendly way? And then it hit me: Breakfast Bars! I took all of the superfoods out of my pantry, spread them out on the counter and grabbed a large mixing bowl, measuring cups and a wooden spoon. In went a little of this and a little of that until the ultimate kickstart to the day concoction was formed.

Full of fiber, protein, omega 3s, antioxidants, vitamins and minerals, these no-fail bars are a great way to start your morning or to keep you going through the afternoon. Little 11 month old Olivia even loves to gnaw away at them!

Ingredients:

1.5 c oats (gluten-free if possible)
1/2 c garbanzo bean flour
1/4 c flax
1/4 c chia
1/4 c maple sugar
1/2 c sprouted pumpkin seeds
1/2 c hemp seeds
1/2 c cacao powder
1/3 c maple syrup
1/2 c unsweetened applesauce
1/4 c raisins or chocolate chips
1/4c coconut oil, melted

Directions:

Preheat oven to 350. Combine all ingredients in a large mixing bowl until moist and evenly mixed.

Pour into an 8×8 Pyrex lines with par bent paper. Wrap your hand in parchment paper and press down firmly on the mixture to evenly distribute in the pan. Make sure it is well compacted!

Bake for 30 mins. Allow to cool, cut and enjoy!
