We adore sweet, healthy and simple treats with REAL ingredients. These cookies have 6 ingredients, paleo, gluten-free, protein-packed and so simple to make–no bowl required. Growing up, remember the peanut-butter cookies with the Hershey Kiss on the top?? These are our take on them. Our clients were asking for healthy “peanut butter-like” cookies and our family wanted something sweet post-dinner—here you go!!! Great for workout re-fueling too.

Simple and delicious with zero junk added. We hope you enjoy them.

Ingredients

Makes 10-12 cookies

*use organic when possible

1 cup of almond butter (Or any other nut butter! We tried it with Peanut Butter and it’s also delicious)

1 cup coconut sugar

1 cage-free, free-range organic egg

2 tbsp chia seeds

1 tsp baking soda

1/2-3/4 cup of dark chocolate chips (to your liking!, we use “Enjoy Life” vegan and gluten-free chips and sprinkled a bit of Moon Juice cacao nibs on them too!)

Directions:

Preheat oven to 350 degrees. In a Vitamix/blender mix all the ingredients (except the chocolate chips) for 1-2 minutes until well combined. Roll dough into small balls (they expand when cooking!) on parchment paper. Place your desired amount of chocolate chips in the center.

Bake for 10-12 minutes. Let cool for 5 minutes.
