One pot, 5 minutes to prep and less than 20 minutes to cook to this energizing and alkalizing green soup. No chopping is required to enjoy this vegan, gluten free and antioxidant packed meal.

Dark green leafy vegetables produce an alkaline effect in our system. When we have too much acidity or inflammation it can lead to disease and imbalances. Greens help balance your acidity and detox you. The fresh ginger, turmeric, parsley/cilantro and lemon adds to the detoxing benefits of this energizing soup! Cilantro helps pull heavy metals from your system.

If you add Kombu, sea vegetable, to the broth while cooking it will add critical minerals, enzymes and nutrients to the soup.

When we prep meals with clients we always teach them the blended soup basics. Blended soups offer so many options for a delicious, healthy and fuss-free meal. It’s a great addition to those looking to detox, trying to lose a few pounds or those that just want a healthy nourishing meal for their family. Prep a large pot on the weekend and enjoy it all week with some lean protein.

Ingredients:

*Serves 4

*4 cups of veggie stalk. (Can use a ½ cup of coconut or almond milk to make more rich. Can also add Kombu, 1 strip, while cooking)

*1 handful of spinach

*1 handful of kale

*1 handful of arugula

* 1 handful of parsley or cilantro (or both)

* 1 handful of chickpeas (for those that do not do beans or if you are detoxing, the soup is still delicious without beans)

*1.5 inches of fresh ginger

*1 red onion

*4 cloves garlic

*2 tbsp turmeric

*Dash of black pepper

*1 tsp cayenne pepper (optional)

*1 tsp Himalayan sea salt

Garnish: ½ of lemon (important!) per cup of soup + sprouted and organic pumpkin seeds + microgreens (or salad!) + EVOO + Himalayan Sea Salt and Pepper.

 

Add all to one soup pot and cook on low/medium for ~20 minutes. If using Kombu remove it prior to blending. Transfer to Vitamix and blend for a few seconds.

Garnish with juice from ½ of lemon, pumpkin seeds, microgreens (or salad!), EVOO + Himalayan Sea Salt.
